Sometimes the best plan is not having a plan. Pretending not to be locals, Mariah and I decided to make the most of living five minutes from D.C. Breaking from my usual habit of planning everything to a T, we followed our split intuition and pedaling feet to the most wonderful day. We had no set plans which led us to monuments, the White House, random coffee shops, and streets we had never been down before. We spent much needed time catching up and I am so lucky to have shared this adventurous day with my built-in best friend. Obviously, after only one day of being a little spontaneous, I am no female version of Indiana Jones. However, I did learn the beauty behind not always having a plan. In the future, I plan to just follow my feet and pedal to wherever life takes me.

Salmon Salad
Base: Baby Spinach & Arugula
Toppings: Avocado, Salmon Burger, Grilled tomatoes & red onion
Dressed with Lemon Juice
So this may seem super fancy and all because it has salmon, but I swear it's not. It's practically effortless. Here's the story, so my amazing roommate (Hi Lizzy!) found these delicious salmon burgers and of course I fell in love. They are so easy to make because...drum roll please...they are frozen!! All you have to do is buy the frozen salmon burger, pop it on the stove for 5 minutes, and vwa-lah you've got yourself a Wild Alaskan Salamon burger.

Lettuce Wrap Things Up
Base: Avocado, Chickpeas, Crushed Red Pepper, Italian and Basil Seasoning.
Topping: Tomatoes, Arugula & Spinach, and Feta.
Dressed with a little Lemon Juice.
This is currently my favorite lunch and super easy to make. First, combine all the base ingredients in a bowl. (I smush the avocado and chickpeas together, but you can skip this step). Second, I spread the base mixture on a tortilla, add the toppings, and (of course) wrap it all up!

Welcome to Lattes & Lettuce!
Lattes & Lettuce began a few months ago when my concerned parents planned an intervention about my "ridiculous" diet that mostly consists of coffee and salads. I found the conversation quite amusing because I could have much worse addictions. Instead of venturing to more food groups I decided to expand my love for coffee and salads by creating Lattes & Lettuce. I started this lifestyle/food blog a few months ago just for myself, but now I would like to share my favorite coffee/salad recipes and outfits with all of you (whoever you are). I hope you all enjoy my lettuce creations, lattes, and looks.
In the photo, the salad base is kale, cabbage, and brussel sprouts. Topped with cranberries, sunflower seeds, and a creamy lemon poppy seed dressing. The latte is made with almond/coconut milk, espresso, and sprinkled with cinnamon.
My Favorite View
When I'm not in the library or binge watching Friends, I'm probably on a walk. I know I know sounds sort of lame going on walks alone and all, but it not as bad as it sounds. I usually leave my phone at home and use the time to disconnect from all the stress of school and life. I think about my day and all the things I accomplished and all the things I didn't (usually this list is a little longer). It helps me to appreciate the big picture and to not focus on small setbacks in a day because there is always tomorrow to ~walk~ towards bigger and better things.
